Liz Lemon, on 30 Rock, talks a little bit about race in every episode. And by acknowledging how potentially offensive it is, she manages to make it hilarious. And as a loser white girl, I know that I am not in a position to get offended, but it seems harmless enough. Seriously, that show has a character named Toofer, because he is Black and a Harvard man, making him Twofer one (two for one, get it, duh). And then Tracy Jordan brings it with some fab "i"m Black" jokes, that I would feel bad laughing at, if this show didn't make it show okay.
Another great example of workin the race angle: Harold and Kumar. Mostly just the first one. The Cherry Hillized, White Castle one. They rock the whole Asian/Indian stereotypes and defy them. They embrace their heritage and mock it. Plus, they have moron cops beating on sweet black men and then getting their commupance. It's just warm and fuzzy.
Political correctness has gotten so out of hand in some places, that it's cool to try and rebel against it. As long as nobody gets offended and there is no cruelty or ignorance behind a statement, I think it might be okay. I'm still working on it. I think I need to finish watching 30 Rock to fully get there.
